Chocolate Peppermint Cookies 



I got this recipe from Gretchen over at Young Ladies Christian Fellowship. They are way easy and so yummy!
1 box chocolate cake mix
1 egg or egg yolk
2 tsp. peppermint extract
1/2 cup butter or margarine, well softened
Preheat oven to 350F. Mix all ingredients until well blended. Roll
into small, smooth balls and place on cookie sheet an inch apart. Bake
8 to 10 minutes. Take them out when they still appear slightly doughy,
and let them sit a few moments on the pan. They harden as they cool,
but if you leave them in the oven too long, they will become very crisp
as they cool.

Extra Ideas:
Dip the tops of the warm cookies in powdered sugar for a snowy look. Or top with cinnamon red hots for a Valentine cookie!
